Balsamic Honey Roasted Radishes

Ingredients

  • 2 cups radishes, trimmed and halved
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 1/2 tsp fresh thyme leaves (or 1/4 tsp dried thyme)
  • Salt and pepper, to taste
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Preheat Oven

    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Prepare the Radishes

    • In a large bowl, toss the halved radishes with olive oil, balsamic vinegar, honey, thyme, salt, and pepper until well coated.

  3. Roast the Radishes

    • Spread the radishes in a single layer on the prepared baking sheet, cut side down. Roast for 15-18 minutes, until tender and caramelized, flipping halfway through for even roasting.

  4. Finish and Serve

    • Once done, remove the radishes from the oven and transfer to a serving dish. Optionally, sprinkle with fresh parsley
