Herb Roasted Mushrooms with Garlic & Thyme

Ingredients

  • 2 cups cremini or white mushrooms, cleaned and halved (or left whole if small)
  • 1 tbsp olive oil
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • 2 cloves garlic, minced
  • 1 tbsp balsamic vinegar
  • 1 tsp honey (optional, for a touch of sweetness)
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat Oven

    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

  2. Prepare the Mushrooms

    • In a large bowl, toss the mushroom halves with olive oil, thyme, garlic, balsamic vinegar, and honey (if using). Season with salt and pepper to taste.

  3. Roast the Mushrooms

    • Spread the mushrooms evenly on the prepared baking sheet, cut side down if halved. Roast for 15-18 minutes, until the mushrooms are tender and slightly caramelized.

  4. Finish and Serve

    • Once the mushrooms are roasted, transfer them to a serving dish. Garnish with fresh chopped parsley
