Herb Roasted Mushrooms with Garlic & Thyme
Ingredients
- 2 cups cremini or white mushrooms, cleaned and halved (or left whole if small)
- 1 tbsp olive oil
- 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
- 2 cloves garlic, minced
- 1 tbsp balsamic vinegar
- 1 tsp honey (optional, for a touch of sweetness)
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish (optional)

Preheat Oven

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Mushrooms

In a large bowl, toss the mushroom halves with olive oil, thyme, garlic, balsamic vinegar, and honey (if using). Season with salt and pepper to taste.

Roast the Mushrooms

Spread the mushrooms evenly on the prepared baking sheet, cut side down if halved. Roast for 15-18 minutes, until the mushrooms are tender and slightly caramelized.

Finish and Serve

Once the mushrooms are roasted, transfer them to a serving dish. Garnish with fresh chopped parsley
