Maple-Glazed Roasted Carrots
Ingredients
- 1/2 lb (about 6 small) carrots, peeled and sliced in half lengthwise
- 1 tbsp olive oil
- 1 1/2 tbsp maple syrup
- 1/4 tsp ground cinnamon
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish (optional)

Preheat the Oven

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Carrots

In a small bowl, whisk together the olive oil, maple syrup, cinnamon, salt, and pepper.

Coat the Carrots

Toss the carrot halves with the maple syrup mixture until they're evenly coated.

Roast the Carrots

Spread the carrots out in a single layer on the baking sheet. Roast for 15-20 minutes, flipping halfway through, until the carrots are tender and caramelized at the edges.
