Maple-Glazed Roasted Carrots

Ingredients

  • 1/2 lb (about 6 small) carrots, peeled and sliced in half lengthwise
  • 1 tbsp olive oil
  • 1 1/2 tbsp maple syrup
  • 1/4 tsp ground cinnamon
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat the Oven

    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

  2. Prepare the Carrots

    • In a small bowl, whisk together the olive oil, maple syrup, cinnamon, salt, and pepper.

  3. Coat the Carrots

    • Toss the carrot halves with the maple syrup mixture until they're evenly coated.

  4. Roast the Carrots

    • Spread the carrots out in a single layer on the baking sheet. Roast for 15-20 minutes, flipping halfway through, until the carrots are tender and caramelized at the edges.

  5. Garnish and Serve

    • Once the carrots are done, transfer them to a serving dish. Garnish with fresh parsley, if desired, and serve immediately.
