Apple & Arugula Salad with Maple Balsamic
Ingredients
For the Salad:
- 2 cups fresh arugula
- 1 apple (Honeycrisp or Fuji), thinly sliced
- 1/4 cup crumbled goat cheese or feta
- 1/4 cup candied walnuts (or plain walnuts if preferred)
- Optional: 1-2 radishes, thinly sliced, for extra crunch
For the Maple-Balsamic Vinaigrette:
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1/2 tbsp maple syrup
- 1/2 tsp Dijon mustard
- Salt and pepper, to taste

Make the Vinaigrette

In a small bowl, whisk together the balsamic vinegar, olive oil, maple syrup, Dijon mustard, salt, and pepper until well combined. Set aside.

Assemble the Salad

In a large bowl or on individual plates, arrange the arugula. Layer the apple slices, crumbled goat cheese, and radish slices (if using) on top.

Add Walnuts

Scatter the candied walnuts over the salad for added crunch and sweetness.
