Apple & Arugula Salad with Maple Balsamic

Ingredients

For the Salad:

  • 2 cups fresh arugula
  • 1 apple (Honeycrisp or Fuji), thinly sliced
  • 1/4 cup crumbled goat cheese or feta
  • 1/4 cup candied walnuts (or plain walnuts if preferred)
  • Optional: 1-2 radishes, thinly sliced, for extra crunch

For the Maple-Balsamic Vinaigrette:

  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1/2 tbsp maple syrup
  • 1/2 tsp Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Make the Vinaigrette

    • In a small bowl, whisk together the balsamic vinegar, olive oil, maple syrup, Dijon mustard, salt, and pepper until well combined. Set aside.

  2. Assemble the Salad

    • In a large bowl or on individual plates, arrange the arugula. Layer the apple slices, crumbled goat cheese, and radish slices (if using) on top.

  3. Add Walnuts

    • Scatter the candied walnuts over the salad for added crunch and sweetness.

  4. Dress the Salad

    • Drizzle the maple-balsamic vinaigrette over the salad, tossing gently if desired to coat the ingredients evenly.

  5. Serve

    • Serve immediately and enjoy.
